Slow Cooker Pork Tacos

I love slow cooker meals. If you work a full time job, like me, I’m sure you’ve been faced with the issue of coming home exhausted from a long day and just not looking to cook up a whole meal. This is why slow cookers are the best. Spend a few minutes in the morning getting everything together, throw it in the slow cooker, and leave it for the day. When you come home, getting your meal ready will only take a few minutes, and it will be a healthy, full flavored meal. Crock pots are also great because it makes so much, you usually will have leftovers, meaning AWESOME lunches in the office.



  • Corn Tortillas
  • 4 lb boneless pork shoulder
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbsp chopped fresh parsley
  • 1 1/2 tsp oregano
  • 2 cups chicken broth
  • 1/2 cup cider vinegar
  • 2 Anaheim peppers, sliced & seeded
  • 4 garlic cloves
  • 1/4 tsp red pepper flakes
  • 1 head lettuce of choice (I prefer romaine or kale)
  • Ranch Dressing
  • Salsa (I prefer spicier foods, so i choose the hot)
  • Carrots, shredded



  1. Combine all ingredients (besides corn tortillas, salsa, carrots, lettuce, and ranch dressing) in slow cooker
  2. Cook on low for 8-10 hours.
  3. Serve on corn tortillas with shredded lettuce, carrots, ranch, and salsa
